Roast to ship

Signature lots are roasted in batches, not pulled off a warehouse shelf. Your bag leaves the roastery within 48 hours of its roast date, and that date is printed on the bag and named in your confirmation email. If your reserve lands after a batch has shipped, we tell you the next roast week rather than sending you older coffee.

Coffee is at its best from roughly three days to five weeks after roast. We would rather you drink a 6 oz bag at peak than store a big bag past it — that is the whole reason Signature caps packs at 6 oz and 10 oz.

Where and how we ship

  • Domestic US — shipped from Iroquois, South Dakota, USPS. Most lower-48 addresses land in 2–5 business days after the ship date.
  • Alaska, Hawaii, APO/FPO — we can ship there; ask on your reserve and we will confirm postage and timing before you pay.
  • International — not on soft launch. We are not set up for customs paperwork yet.
  • Postage — quoted as actual cost on your reserve reply. There is no free-shipping threshold yet; when shipping is fully costed we will publish one here instead of burying it in the price.
  • Local pickup — available at the roastery. Say so in your reserve notes and skip postage entirely.

Whole bean by default

Every Signature bag ships whole bean. Ground coffee stales in days, and a reserved lot does not survive that. If grinding is the difference between drinking it and not, note your brew method in the reserve form and we will tell you honestly whether we can grind for your roast week.

Paying during soft launch

There is no cart on this site yet, and we are not pretending otherwise. The path is short:

  1. Pick a lot and pack, then send the reserve request. Nothing is charged.
  2. We reply within one business day with the roast week and a Stripe payment link.
  3. You pay on Stripe's page. Card details never touch this site or our server — Stripe holds all of it.
  4. You get the roast date and tracking when the bag ships.

A reserve is not a charge and not a commitment on your side. If you change your mind between the reserve and the payment link, ignore the email or tell us — nothing happens.

If something is wrong with your coffee

Roasted coffee is a perishable food product, so we cannot restock and resell a returned bag — that is a food safety rule, not a loophole. What we do instead is simpler:

  • Damaged, wrong lot, or lost in transit — email or call within 14 days of delivery. We replace it or refund it. Your choice, no restocking fee, no return shipping to arrange.
  • Bag arrived past its window — if the roast date on the bag does not match what we promised you, that is our error and we fix it the same way.
  • You did not like the cup — tell us what fell flat. We are a small roastery and we would rather learn something than argue. On a first Signature order we will make it right; we will also point you at the lot that actually suits how you brew.
  • Unopened and unshipped — if you paid and the bag has not left the roastery, we refund in full.

One request in return: keep the bag and tell us the roast date. It is how we trace a batch.

Common questions

Are these the same coffees as Aerís Roasting Co.?

No. Signature lots are reserved separately and cleared by the Signature panel. We never put a Signature label on an everyday Aerís lot to charge more for it — different green, different bag.

Why no 1 lb or 5 lb Signature bag?

Freshness and honesty. Bulk sizes belong on Aerís Roasting Co., where the pricing is built for them. Signature stays at 6 oz and 10 oz.

Do you sell on Amazon or in grocery?

No. Signature is site-first, plus the roastery counter.

Is there a subscription?

Not live yet. The reserve list gets first word when the 10 oz Roaster's Choice cadence opens, and reserve members get first pick on new lots.

Do you do gifts?

Yes — the 6 oz pack is built for it, and a gift trio is available on reserve. Add the message you want on the card in your reserve notes.

Is this a licensed facility?

Yes. Everything is roasted and packed in the commercial Aerís Roasting Co. facility at 204 4th Ave, Iroquois, SD 57353 — not a home kitchen.
