Prestige brands taught buyers to care about roast date, process, and producer. Signature keeps that bar and uses pack size psychology: a 6 oz tasting bag at $14–18 feels accessible while still reading as specialty. A 10 oz house bag at $22–28 competes with many 12 oz prestige bags on a per-pound basis.
We do not relabel everyday Aerís lots at a higher price. Signature means reserved green, tighter curation, and scarcity you can verify.
